Instant Gongura Mutton Pickle
Ingredients:
For the Mutton:
500g mutton, cut into small pieces
1/2 teaspoon turmeric powder
Salt to taste
1 tablespoon ginger-garlic paste
For the Gongura Paste:
1 cup gongura (sorrel) leaves
1/2 teaspoon turmeric powder
1 tablespoon oil
For the Pickle:
1/2 cup oil (preferably sesame oil)
1 tablespoon mustard seeds
1 tablespoon fenugreek seeds
1 teaspoon asafoetida (hing)
2 tablespoons red chili powder
1 teaspoon turmeric powder
Salt to taste:
1 tablespoon tamarind paste (optional, if you like extra tanginess)
2 tablespoons jaggery (optional, for a hint of sweetness)
Instructions:
Prepare the Mutton:
In a pressure cooker, add mutton pieces, turmeric powder, salt, and ginger-garlic paste.
Add enough water to cover the mutton and cook for 4-5 whistles until the mutton is tender.
Drain and set the mutton pieces aside.
Prepare the Gongura Paste:
Wash and clean the gongura leaves thoroughly.
In a pan, heat a tablespoon of oil and sauté the gongura leaves with turmeric powder until they become soft and mushy. Let it cool.
Grind the sautéed gongura leaves into a smooth paste and set aside.
Prepare the Pickle:
In a large pan, heat the oil. Add mustard seeds and let them splutter.
Add fenugreek seeds and asafoetida. Fry for a few seconds until fragrant.
Add the cooked mutton pieces and fry until they turn golden brown.
Add the gongura paste, red chili powder, turmeric powder, and salt. Mix well.
Cook on low heat, stirring occasionally, until the oil starts to separate from the mixture.
If using tamarind paste and jaggery, add them at this stage and mix well.
Cook for another 5-10 minutes on low heat, allowing all the flavors to meld together.
Let the pickle cool completely before storing it in an airtight container.
