Instant Amla Pickle is a tangy and flavorful way to enjoy the health benefits of amla, also known as Indian gooseberry. Here’s a guide to preparing this pickle:
Ingredients:
Fresh Amla (Indian gooseberry): 250 grams
Mustard oil: 2 tablespoons
Mustard seeds: 1 teaspoon
Cumin seeds: 1 teaspoon
Fennel seeds: 1 teaspoon
Turmeric powder: 1/2 teaspoon
Red chili powder: 1 teaspoon (adjust to taste)
Asafoetida (Hing): 1/4 teaspoon
Salt: 1 teaspoon (adjust to taste)
Sugar: 1 tablespoon (optional)
Lemon juice: 2 tablespoons
Preparation Method:
Preparation of Amla:
Wash the amla thoroughly and pat them dry.
Cut each amla into quarters and remove the seeds. You can also chop them into smaller pieces if you prefer.
Blanching:
In a pot of boiling water, add the chopped amla pieces and cook for about 5 minutes.
Remove the amla from the boiling water and let it cool. This step helps to soften the amla and remove some of its bitterness.
Tempering:
Heat the mustard oil in a pan until it starts to smoke lightly.
Add mustard seeds, cumin seeds, fennel seeds, and asafoetida to the hot oil. Let them splutter.
Mixing:
Add the blanched amla pieces to the pan.
Stir in turmeric powder, red chili powder, salt, and sugar (if using). Mix well so that all the pieces are coated with the spices.
Finishing Touch:
Turn off the heat and let the pickle cool down to room temperature.
Once cooled, add lemon juice and mix again.
Storage:
Transfer the pickle to a clean, dry jar.
Store the jar in a cool, dry place. Let the pickle marinate for at least 24 hours before consuming. It will continue to develop flavor over time.
