Vinegar: 1/4 cup
Oil: 2 tablespoons (preferably mustard or sesame oil)

Prepare the Garlic: Peel the garlic cloves and set them aside.
Dry Roasting Spices: In a pan, dry roast mustard seeds and fenugreek seeds until aromatic. Let them cool, then grind them coarsely.
Mix Ingredients: In a mixing bowl, combine the garlic cloves, ground spices, red chili powder, turmeric powder, asafoetida, salt, and vinegar.
Heat Oil: In a small pan, heat the oil until it’s hot. Pour the hot oil over the garlic mixture and stir well to combine.
